Our grass-finished beef short ribs are bone-in. Some people prefer the bone-in version of this cut because the bones offer additional flavor, help stabilize the meat during cooking so it doesn’t fall apart, and offer a more interesting look on the plate. If desired the bones can be easily pulled from the short ribs after braising so you can serve them boneless.

Our food system today is broken—packed with chemicals and stripped of nutrients. The soil is deteriorating, and our health is failing because of what we consume. But I have chosen a different path: meat raised on grass, as God intended, far from the corrupt corporate system.
My journey with Parker Pastures began when I was just five years old. My parents started this mission to provide my brothers, me, and our community with healthy, pasture-raised, grass-fed, and grass-finished meats, raised in a way that healed the land.
Growing up, my mornings were spent milking cows, playing in irrigation ditches, building fences, moving cattle, and being followed by bottle-fed lambs that I cared for. I learned that caring for the land meant receiving its gifts in return—in the form of nutrient-dense, life-giving meat.
But it hasn’t been an easy road. After high school, I left to work on a ranch in Oklahoma to expand my knowledge and gain experience. Then, my life was flipped upside down when my mom was diagnosed with cancer. I returned home immediately to help my family, and at 18, found myself at the helm of the business, managing payroll, operations, and everything in between.
Ranching is my first love, and providing nutrient-dense meat is my purpose. In 2023, just before my 20th birthday, I officially took over Parker Pastures, and it has been a God-ordained journey ever since.
What started as a focus on being the "Best In Beef" has grown into the "Best In Meat". We now collaborate with a select group of world-class ranchers and farmers, offering not just beef, but also pork, chicken, lamb, and bison—raised on pasture, free from antibiotics, mRNA vaccines, and growth hormones.
